Snow Day Salad

20130222 011One of the jokes I often make is that I can’t afford to cook for myself. Of course that’s not true. I say it to justify eating out as much as I do. However, when I do cook at home I like really good ingredients, so it can be a little more expensive.

I’m not sure why I like to eat out so much, but I do. A few years ago when I had to conserve money to pay medical bills I decided that was one of the last things I would give up. Eating out is one of my main social activities.

Of course, during our recent snow storm I’ve had to cook for myself. I’m incredibly thankful I know how to cook. I’m not sure what people do who can’t fend for themselves in that department.

This salad, however, could be whipped up by someone with only the most basic of abilities. It’s just fresh spinach topped with some goodies. I sauteed some portabello mushrooms in a little butter and added some walnuts. I put that over the fresh spinach and added some gorgonzola and dried cranberries. I use a little balsamic vinegarette over all.

Perfect on a snowy day or a sunny one.

Epitaphs for Patsy

In a document she left behind for a good friend, Patsy listed five possible epitaphs that could be used at the time of her passing.

  • ‘Lived Fully. Laughed Loudly. Gave generously. Gone.’
  • ‘Lived, Laughed and Loved. Continuing that elsewhere.’
  • ‘Lived fully every day. No regrets now.’
  • ‘The journey continues It has been magical.’
  • ‘A magical journey so far no regrets.’
